What is Mace?

Mace is the bright red, lace-like outer covering (aril) that naturally surrounds the seed of the nutmeg fruit. After harvesting, the aril is carefully separated from the nutmeg seed and dried until it develops its characteristic golden-orange colour.
Although mace and nutmeg come from the same fruit, they differ significantly in flavour, aroma, colour, and culinary uses. Mace possesses a finer, slightly sweeter, and more delicate flavour than nutmeg, making it highly valued in gourmet cooking and premium spice blends.
The nutmeg tree produces two valuable spices from the same fruit — nutmeg, the inner seed, and mace (Jathi Pathri), the outer aril surrounding it. Both are harvested together but processed separately for different commercial uses.

From Fruit to Spice
Tree Growth & Harvesting
Nutmeg trees begin bearing fruit after 7–9 years. Mature fruits split open naturally, revealing the nutmeg seed wrapped in bright crimson-red mace, which farmers handpick carefully.
Separating the Mace
The outer fleshy fruit is removed, and the delicate red mace is gently separated by hand from the nutmeg seed — a precise process to preserve the blade shape.
Natural Drying
During drying, the brilliant red mace gradually turns golden-orange while developing its characteristic warm aroma, preserving colour, oil content, and shelf life.
